Downtime and In Stock 

Goal: Targets are 17% (1:25 hour/day) overall on downtime and 5% (17 minutes/day) during peak hours (11AM-2PM and 4PM-7PM). In stock target is 96% (No more than 2 items)

Sushi Chef Action:

• Sushi chef must be available during marketplace platform operating hours; 10:30AM – 7PM daily.

– Do not disable the tablet at the end of the day, only if there is an approve reason to leave early (before 7PM). The tablet will not accept orders outside of operating hours.

– Disable ordering whenever away from the tablet.

– Make sure the full assortment of the 3rd party delivery menu is available during the hours of operation.

 Manage menu out of stock throughout the day in the expo tablet. If you fail to mark an item out of stock in the system, customers can still order which will result in a cancelation or missing items.

Avoidable Cancellations 

Goal: Target is 0.3% of total orders or lower – Aim for 0%.

Sushi Chef Action:

• If you have an active order that is waiting to be picked up, DO NOT leave the kiosk during that time. If the courier comes while you are gone (even if a way for only a minute) the order could be canceled.

• Disable ordering whenever away from the tablet.

o We are on “Auto Accept” which means if the tablet is enabled if an order come in, it will be accepted, and a courier will arrive. If no one is there to handoff the order, it will result in cancellation.

 Manage menu out of stocks throughout the day in the expo tablet. If you fail to mark an item out of stock in the system, customers can still order which will result in a cancellation.

o Double check orders to ensure the accuracy of the order handed to the courier, use the 3PD labels.

 

Missing/Incorrect

Goal: Target is 1.5% of total orders or less.

Sushi Chef Action:

 Double check orders to ensure the accuracy of the order handed to the courier, use the 3PD labels.

o Ensure the product is up to our Freshness Standards.

o Verify that all modifiers are in the order –chop sticks, soy sauce, etc.

 

Courier Wait Time

Goal: Target is 7 minutes or less

Sushi Chef Action:

 Ensure the order is ready by the “ready by time” listed on the order detail screen.

o Ask the courier to validate that they have accepted the order in their handheld at the time of hand off.


Courier Rating

Goal: 4.7 stars or higher

Sushi Chef Action:

 By ensuring we are open during published hours, in stock, orders are accurate, on time, and fresh, we will achieve the minimum target of 4.7 or higher on customer ratings
